Clear Soup for the Soul

We’ve turned the health and fitness gears up a notch at home. Aside from boxing three to four times a week, Paul and I have been consciously choosing healthier and inexpensive foods for our daily meals, and forgoing snacks, coffee-dates, and other luho comfort foods. For about a month now, we’ve been eating mostly lettuce (with non-creamy dressing), tuna, eggs, cauliflower and other fresh vegetables, and different kinds of soup. No rice (brown, if ever), breads only during a workout day, and definitely no pizza or pasta. We’ve also promised each other to stay away from junk food and fast food for as long as we can.
(Okay—there’s the occasional barbecue, shawarma, and Zagu shakes, but that’s about the only luho foods that we’ve been eating lately.)
I’m realizing that preparing a tighter, healthier menu at home isn’t just better for the health and lighter on the pocket; it’s nourishing for relationships, too.
Aside from helping to channel both our creative instincts toward the kitchen, our new routine has made us both more eager to create meals that we can share with each other. Now, meals aren’t just part of the daily grind; they have become activities that we fully participate in. We throw ourselves wholly into the task of creating healthier meals, simply because it means taking better care of each other and helping each other achieve shared goals.
And when I wake up to find Paul preparing yet another soupy meal as part of my baon to work, I feel that he is nourishing my soul for the day. It’s one of those things that make one feel so loved.
Tonight I prepared a simple clear soup that might go well with a variety of dishes. It’s no culinary masterpiece, believe me, but it’s so amazingly simple (and yummy, hahaha) that I’ve decided to share it with you here. For lack of a better name, let’s call it Sopa a la Niña. =)
Ingredients
1 whole onion, coarsely chopped
4 cloves of garlic, finely chopped or grated
1 tablespoon spring onions, finely chopped
1 cup beansprouts
1 packet tomato sauce (about 200g)
1 piece beef broth cube (or beef stock, to be healthier)
White pepper, to taste
Brown sugar, to taste
Water (about 6 cups)
Directions
1. Simmer the water in a saucepan.
2. Throw in onions, spring onions, garlic, and beef broth cube as the water simmers. Stir continuously.
3. Pour tomato sauce. Mix well.
4. Sprinkle pepper and sugar to taste. The more white pepper, the better. (It adds zing to an otherwise bland soup.)
5. Add the beansprouts before the water boils. Do not overcook!
Serves
About four to six (if using small cups or bowls)
Good with
A light meat dish, such as chicken breast, broiled porkchops, or seafood
